As many of my clients know, meal planning is not my specialty :) Meals usually go something like this: What's in the fridge and how can I combine it to make something tasty and edible?
Of course it's best to eat the most whole, unprocessed foods we can, but in this day and age, it's not always possible...even for a dietitian. I like to keep MorningStar frozen veggie burgers on hand for when I need something quick and easy but still fairly healthy.

My favorites are Mediterranean Chickpea, Spicy Black Bean, and Asian Veggie. Tortillas are also great to always have in the fridge because you can put anything in a tortilla!
My favorite tortillas are Joseph's Flax, Oat Bran, and Whole Wheat Tortillas. I like this brand because they don't have trans fats, unlike many wheat tortillas, which actually do despite saying 0 g of trans fats on the nutrition label. Remember to check the Ingredients List for "partially hydrogenated oils." These are keywords for trans fats.

When I needed something quick and easy for lunch the other day, I whipped up this delicious veggie wrap. It takes about 5 minutes to make.
Easy Peasy Veggie Wrap
Ingredients:
1 MorningStar Mediterranean Chickpea Veggie Burger
1 tortilla (Joseph's Flax, Oat Bran, and Whole Wheat Tortilla)
1 handful spinach
1-2 tbsp shredded sharp cheddar cheese
1 tbsp Craisins
Instructions:
1. Add 1-2 tsp olive oil to a skillet on the stove. Place MorningStar Mediterranean Chickpea Veggie Burger in skillet and cook for ~5-7 min (directions on package).
2. Take out one Joseph's Flax, Oat Bran, and Whole Wheat Tortilla.
3. Add one handful of spinach into tortilla and top with the cooked veggie burger, cheese, and Craisins.
If you have hummus, it's the perfect addition. I didn't have any and was wishing I did!
Voila! Enjoy :)
