To avoid the "I have no food on hand and nothing to make" problem that we all face, I always keep some essentials on hand:
Eggs
Spinach
Plain non-fat Greek yogurt
Salsa
Tortillas
I probably always have these things in my refrigerator. Why? They stay good for quite a while, they are versatile to cook with, and you can make a meal out of them in less than 5 minutes.
Last night I created some Open Face Egg Spinach Tacos as I was rushing around getting ready for INSANITY. I don't recommend eating anything within the hour before going to an INSANITY work out class. I learned the hard way.
Anyways, here's the recipe for this super quick dinner. I'm sure you've probably made this or something similar before. Keep it in your back pocket (and keep the ingredients in your refrigerator), and you'll always have a back up dinner plan!
Open Face Egg Spinach Tacos
Ingredients
1 tsp oil or cooking spray
1 handful spinach
2 eggs
2 tbsp salsa
2 tbsp non-fat Greek yogurt (Fage is my current go-to brand)
2 corn tortillas
Directions
1. Heat a skillet on medium heat and add oil or cooking spray.
2. Toss in a handful of spinach to one side.
3. Crack 2 eggs on the other side
6. When eggs are cooked to your liking, take the warm tortillas off the skillet and add 1 cooked egg to each tortilla
7. Split the spinach between both tortillas
8. Add 1 tbsp of salsa and 1 tbsp of Greek yogurt to each tortilla
9. Top with a hint of lime juice for some extra flavor
10. If I had avocados on hand, I would've added those too!
