This will be the easiest, most delicious breakfast sandwich you ever learn to make. There are only 3 ingredients: eggs, avocado, and bread. Don't hate on bread! Just choose the right kind. Ezekiel bread is now the only type I buy (except when the husband brings home a delicious bread from a local bakery).
Ezekiel bread can be found in the frozen section of the supermarket. I love it because it's jam-packed with fiber, protein, and B vitamins. In just 2 slices of Ezekiel Flax, you get a whopping 8 g of fiber and 10 g of protein for just 160 calories. What cereal can give you that?
The combo of protein and fiber from the bread, protein from the eggs, and healthy fat from the avocado will keep you full until lunchtime.
INGREDIENTS
2 slices Ezekiel bread
2 eggs
1/2 avocado
INSTRUCTIONS
1. Toast Ezekiel bread.
2. While bread is toasting, scramble or fry eggs.
3. Slice avocado in half. Remove skin from the half without the pit and slice or mash onto bread. Put the half with the pit in a plastic bag in the refrigerator and use it at dinner.
4. Plop eggs and avocado onto toasted bread and enjoy!
You can spruce this up all kinds of ways. Add tomatoes, cilantro, spinach, or salsa. This is the basic version for when your refrigerator is empty :)
Enjoy!
