My sister-in-law invited me over for pancakes this morning, and we decided to jazz them up a bit! We tweaked this recipe from allrecipes.com.
Ingredients:
1 c whole wheat flour
1/4 c white wheat flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 tsp salt
1 1/4 c water
1 tbsp oil
2 tsp vanilla
1 tsp nutmeg
1 tbsp ground flax meal
Directions:
Add all ingredients to a mixing bowl and stir until fully mixed.
If mix is too thick, add 1-2 tbsp water.
Add to greased skillet.
Makes ~10 medium sized pancakes
We drizzled honey on the finished product, which was delicious! The wheat flour adds protein and fiber, while the flax meal adds good-for-you omega-3 fatty acids.
